Easy Peasy Pad Thai - Vegetarian, Gluten Free & Vegan

I like this kinda cooking which takes very little prep time and is healthy and delicious.


Need:

Pad Thai Rice noodles - 1 small package

Green Onions diced

Extra firm tofu diced - 1/2 pack (I like to sauté it or air fry it before hand to keep the cubes intact)

Tamari or GF soy sauce - 2tbsp

Sriracha Sauce or other Garlic hot sauce you prefer - 1 tbsp

Thai Kitchen - Sweet red chili sauce - 1- 2 tbsp

Thai Kitchen - Red curry paste 1 tbsp

Minced Garlic 2 tsp

Minced Ginger 2 tsp

Sesame Oil 1 tbsp

Chili flakes if you want it extra spicy.



How:

Boil the noodles and cook them in water with some oil to make sure they stay separate, according to the package instructions. I like mine a little softer so I cook them few minutes more than the package recommendations.

Strain them and run cold water on them.

In a pan add 1 tbsp of Sesame oil, add garlic and ginger,

Once that browns a little, add in all the ingredients except Tofu, onions and noodlesand mix well.

Add the tofu and noddles at the end.

Add Green onions last and mix well with a light hand to make sure the tofu doesn't break.

Thats it.
